Summertime. Nothing says summertime to me like a cold drink and some fruity desserts. One of my all time favorite desserts for summertime is Strawberry Pie. In case you don’t already know this about me, I LOVE pie. I can’t say it enough. I love pie.

I really need the bumper sticker, t-shirt, mug, all of it. So everyone around me would know just how much I love pie.

Strawberry Pie is no exception. I really love Strawberry Pie too. When things grow in the garden you find ways to use the things that grow. Strawberries are no different. When you plant one plant it can multiply. My sister-in-law and brother-in-law planted something like 25 plants one year late spring and it turned into hundreds of new baby plants the next year. We had so many strawberry plants.

This year Mrs. Terry and I dug up those plants and were giving them away. I hope all my friends that got strawberries from us reaped the rewards of those sweet little gems. They can make a ton of fruit. They are sweet, delicious, and packed full of fiber, vitamins and good for you antioxidants. Yippee! My kind of dessert.

One thing to do with that fruit is make pie.

Obviously.

This pie is super easy. It only takes one crust and aside from baking the crust you don’t have to bake this pie, so no heating up the house too much in the hot summertime. If you need directions on how to blind bake a pie crust you  can find them here.

Strawberry Pie

Ingredients
  

  • 1 9 " Pie Crust baked
  • 6 cups fresh strawberries plus more for top washed and drained
  • 1 cup sugar
  • 3 TBS corn starch or clear gel I usually use clear gel
  • 3 TBS water

Instructions
 

  • Slice enough strawberries to go around pie plate. Set aside
  • Mash the remaining strawberries and set aside
  • Combine sugar and cornstarch in a saucepan.
  • Stir over medium heat adding water and mashed strawberries.
  • Bring to a slight boil.
  • Cook for about three minutes.
  • Remove from heat and cool.
  • Add filling to baked pie crust.
  • Refrigerate for at least an hour.
  • Serve with whipped cream.
