I love to cook (hush TJ … it is the truth). I love sharing recipes too. So I think on Friday’s I will start sharing Frugal Food ideas and recipes. Chicken Pot Pie is one of my favorite one-pot meals, especially on a busy weeknight. It doesn’t take very long to prepare and it only uses a few ingredients, but it is so hearty it is a stand-alone meal. It is also a great way to make more than one meal out of a whole chicken.


Once while at my brother’s house for dinner my nephew told me he loved his daddy’s cooking except for one time he made chicken and vegetables with pie crust in it (my brother informed it was my recipe haha) but I have to say he is the only one I know that doesn’t approve of this easy weeknight chicken pot pie recipe. His problem with it is the pie/pie crust which he doesn’t like, but I think the pie crust is my most favorite ingredient in chicken pot pie. He’s the only person I know that has eaten it and not loved it (even my little one eats it and he hardly eats anything).

This is a recipe my mama used to make and doesn’t require you make any kind of roux/base sauce first like some other chicken pot pie recipes I have seen. I have tried a few of those and loved them, but the simplicity of this is just too good to pass up. Since moving to Tennessee to my husband’s family’s farm I am trying all the time to simplify and live frugally I love this type of recipe. I literally mix all the ingredients in a bowl and dump them into the pie crust. I make it even easier by using already cooked and cut chicken leftovers. Usually what I do is buy a rotisserie chicken at the deli and make it one night for dinner.

It is a true one dish meal and it can stand alone without any sides because it is very hearty.  I love to douse it in Crystal hot sauce when it is piping hot out of the oven, but you don’t have to do that.

Ingredients
  

  • 2 - 9 "pie crusts can use ready to cook or make your own or my recipe
  • 1 lb chicken meat
  • 1 - 15 oz can of condensed cream of chicken soup I like Campbell's
  • 1 - 8 oz container of sour cream
  • 1 small bag of frozen mixed veggies
  • 1 tbs poultry seasoning or rubbed sage
  • 1 tbs creole seasoning

Instructions
 

  • Preheat oven to 350 degrees. In large bowl combine all ingredients and stir well. Spoon contents into bottom pie crust and spread out evenly. Place top crust over the pie and press the crusts together with a fork or spoon. Make sure to place slits in the top crust to vent or use a pie bird. Bake for 40 mins or until crust is golden brown and filling is hot and bubbly. When you remove from the oven brush top crust with butter.
