HONEYSUCKLE makes me happy in summer. This Honeysuckle Simple Syrup says it’s going to be a sweet summer.

The Honeysuckle is in full force around here. Which is great because you know I have bees, right? Honeysuckle is not just for the bees though. It is not only pleasing to the nostrils but can be used medicinally and contains quercitin. The essential oils can be used in lotions and soaps, (if you are interested in learning how to make that check out my Beginner Soap Making Course) you can use it to add fragrance to your home, and you can make Honeysuckle Simple Syrup.  My boys love it.  

I LOVE the way they smell, we stop to pick them and suck all the nectar out every time we drive around the farm. It grows on nearly every fence we have (and y’all know I’m always talking about our fence and how overwhelming it is) and it smells like a bottle of perfume around here right now. BETTER actually. 

One of my favorite things to do with Honeysuckle is to gather a bunch of it and turn it into Honeysuckle Simple Syrup.

I use it in sweet tea, lemonade for the kiddos, old fashions, and sparkly water. Shall I go on? 

You get the picture. 

It’s super easy to make and has a very subtle sweetness/honeysuckle flavor to it. The recipe below calls for 1 cup of each, you could adjust as needed and use equal parts of all ingredients. You can use regular granulated sugar, cane sugar, or brown sugar to make this simple syrup. 

Bring all ingredients to a gentle boil and remove from heat. Let it steep for about 5 minutes. Strain out the honeysuckle and funnel it into your favorite bottle.

Honeysuckle Simple Syrup

Ingredients
  

  • 1 cup honeysuckle flowers (leaves and stems removed)
  • 1 cup water
  • 1 cup sugar

Instructions
 

  • Remove stems and leaves from honeysuckle.
  • Combine all the ingredients in a medium saucepan
  • Bring to a gentle boil, stirring occassionally
  • Remove from heat and continue stirring until it is clear again
  • Strain out the flowers and pour into your favorite bottle
  • Keep in the fridge once open and discard unused syrup after two weeks
