Banana Bread 

You’ll love this banana bread and never throw another old banana away again.

Is it just me? 

Ever let bananas get way too ripe on the counter? Yes? Well, you are not the only one. I am guilty of this all the time. In fact, it’s happening right now as I write this. Sometimes my kids and husband devour bananas and then next time I buy them no one eats any. Am I the only one this happens to?

I LOVE Banana Bread and I LOVE that it is so quick and easy to make, but tastes fancy and also makes a great homemade gift, 😀so bonus! You can eat it any time of year too. It’s always appropriate I think.

This recipe has an added layer of streusel deliciousness. I have definitely made it without it and any puritans out there who like it plain and simple can certainly omit the streusel topping, not recommended because I love the streusel. Certainly allowed though.

Making it is easy

You’ll need a loaf pan to make this banana bread. There are three simple steps to making this. First you mix the dry ingredients together and then you mix the wet ingredients and then you mix both together. That’s eat. Nothing complicated. Also, it is best the next day after being wrapped up overnight but it doesn’t always make it that far here and usually gets eaten right out the oven so quickly I can’t wrap it up. 

Eating it is even easier

You can eat this by itself or toast it and spread some butter love on it. That’s probably by absolute favorite way to eat this. BUT … once on a trip to Savannah, GA (one of our favorite places) we had brunch at the cutest little breakfast bistro and I ordered the Bananas Foster Banana Bread French Toast and, well, it was nothing short of decadent and spectacular. I have said ever since I ate those three bites (because it was so rich that is all I could eat) that one day I’d host a brunch and serve that. I still haven’t done that, so that reminds me I need to plan a girls’ day brunch and have my ladies over to try that. When I do, I’ll be sure to share that here on the blog. 

Keeping it fresh

If you have any left after it comes out the oven piping hot and smelling amazing you can put it in a covered cake dome, container with a lid or wax paper for about a week. You could also slice it up and wrap each slice individually in butcher paper or wax paper and then freeze them in a freezer safe container and pull out one at a time when you get a craving for something sweet.

Banana Bread

This quick banana bread can be made with or without nuts and the addition of a crumbly, sweet, streusel topping kicks it up a notch.

Equipment

  • 1 loaf pan

Ingredients
  

  • 2 cups all-purpose flour can sub 1/2 cup of whole wheat flour if for 1/2 cup of all-purpose if desired
  • 1.5 tsp baking powder
  • .5 tsp baking soda
  • .25 tsp salt
  • .5 tsp pumpkin pie spice
  • 2 eggs beaten
  • 6 bananas ripe and mashed
  • 1 cup brown sugar
  • .5 cup melted butter can use olive oil if desired
  • .5 cup nuts walnuts or pecans are optional

Streusel Topping

  • .5 cup brown sugar
  • 3 tbsp all-purpose flour
  • 3 tbsp butter
  • .25 cup nuts walnuts or pecans are optional

Instructions
 

  • Preheat the oven to 350
  • Grease and flour the inside of a loaf pan
  • In a large bowl combine all the dry ingredients and form a well in the center
  • In a separate bowl combine the eggs, bananas, sugar and butter, stir
  • Pour the liquid mixture into the flour well and stir until all the flour mixture is moist. It will be lumpy. Fold in nuts at this point if adding them
  • Pour into the loaf pan
  • If adding streusel topping sprinkle it on top the batter now
  • Bake for 55-60 minutes, or until a knife inserted comes out clean.
  • Remove from oven and allow it to cool in the pan for about 10 minutes on a wire rack.
  • Remove it from the pan and allow it to cool completely.

Streusel Topping Instructions

  • Combine brown sugar, flour and cut cold butter into the flour and sugar
  • Use a pastry blender to cut the butter in until it resembles large, coarse crumbs
  • Can add nuts once crumbs are achieved (optional)
