The cost is $6.75/lb hanging weight which includes processing, USDA Inspection, Packaging and Local Delivery. The hanging weight is the weight of the animal after initial slaughter, but before it is processed into cuts. This means that if the animal is 1200 lbs at the time of processing it will yield approximately a 750 lb carcass. The hanging weight is 750 lbs. and that carcass will yield about 450 lbs of trimmed, boneless beef.
