Preheat oven to 350 degrees.
Line a baking sheet with parchment paper or silpan liner.
Combine all ingredients, but reserve the white chocolate chips until after the other ingredients are mixed in a medium bowl until well-combined.
Gently fold in the white chocolate chips after all other ingredients are mixed.
Drop by rounded teaspoonful onto parchment lined baking sheet.
Bake for 10 minutes (check at 9 if your oven runs hot) you DO NOT want them to brown. You want them baked just until done.
Allow the cookies to cool on the baking sheet for 5 minutes and then transfer to a wire cooling rack.
