Meatloaf

This classic comfort food is so easy to make and only uses a handful of ingredients.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 1 small bell pepper seeded and finely chopped
  • 1 15 oz tomato sauce
  • 1/4 cup crushed cracker crumbs we like the buttery kind (club crackers)
  • 1 large egg
  • 1/2 tsp salt and pepper more to taste as needed

Equipment

  • 1 loaf pan the one with the drip pan is amazing for meatloaf

Method
 

  1. Preheat oven to 350
  2. Combine all the ingredients except for half of the tomato sauce
  3. Form into a loaf and place in a loaf pan
  4. Cook at 350 for 35-40 mins covered
  5. Drain the loaf pan and top with the remaining tomato sauce
  6. Cook an additional 10 minutes uncovered
  7. Remove from oven and slice and serve hot
