Sirloin Beef Tips cook low and slow and simmer in all their gravy goodness.

I love to eat Sirloin Beef Tips and I love to eat them on egg noodles. My boys get super excited about this and the best part about it is that it is really low key and easy to make. I make them with different cuts of beef. I don’t always have the tips of tenderloin available to use.

This time I had Stew Beef and a Sirloin Tip Roast available. Both are a little less expensive than the Tenderloin.  For this recipe, I used a Sirloin Tip Roast cut into 1-inch cubes. It is a pretty small roast, but when cut up it can easily feed the nine of us here.

I cut it into 1-inch cubes and seasoned it all with Tony Chachere’s which is what I use to replace salt and pepper on most days. You can also use salt and pepper.

I begin this dish by frying the meat in a little olive oil over medium heat to sear it. I don’t want to fully cook it, but just get the meat a little brown all around. Once it is brown I add the minced garlic and onions and cook for one minute.

Once it reaches that stage I add a dusting of flour to the top of the meat and stir it up to coat it. You can let that cook for about a minute or two and make sure it is mostly coated. At this point, you can add warm to hot (not cold) water to the pot and stir continuously until the flour breaks up and begins to thicken into a gravy.

Once your gravy is thickened you can add more water and stir until you have a more soupy texture. Some of the moisture will evaporate while it stews and you will reduce your gravy a bit.

Let the Beef Tips stew on low for at least an hour. You will need to adjust cook times for the amount of beef you use.

I serve this over egg noodles. I know lots of people who prefer mashed potatoes. It is very good over rice as well (I know my Louisiana people know what I’m talking about).  Peas, Carrots, Brussel Sprouts, Asparagus, or a simple salad all make great sides to Beef Tips and gravy.
